Ingredients for Brinjal Chutney | Vankaya pachadi In English :

* Brinjal – 2(big size)
* Oil – According to the Taste
* Dry Red chillies – 4
* Cumin seeds(jeera) – 1 Tsp
* Mustard seeds – 1 Tsp
* Asafoetida(Hing) – 1/2 Small Tsp
* Onion – 2
* Green chillies – 4
* Curry leaves – 2
* Water – 1 1/2 Cup
* Tamarind paste – 1 Tsp
* Jaggery – ½ Cup
* Sugar – 1 Tsp
* Turmeric powder – 1/4 Tsp
* Red chilli powder – 1/4 Tsp
* Salt – According to the Taste

How to Make Brinjal Chutney | Vankaya pachadi In English :

*Directly cook brinjals on stove.After cooling, remove brinjal skin and mash them.Take 2 table spoons of oil in a pan,Add dry red chillies, cumin seeds, mustard seeds, asafoetida and fry them.After that add onion pieces, green chillies, curry leaves and cook them.

Now add mashed brinjal, tamarind paste, jaggery, sugar, turmeric powder, red chilli powder, salt, water and cook for 10 mins, keep its consistency as you desire.
